## Materials & Notes

Second try, using self-sourced materials.
* 1 gallon carboy
* D-47 yeast
  * Added to must directly as directed by kit, contrary to technical information from the yeast vendor. Perhaps this is okay since our must is entirely liquid.
  * Used less water this time compared to [Batch #1](https://u.staceyell.com/s0.rQrvjXvfcMvHG), nothing on walls.
* Half a teaspoon of yeast nutrient (Fermaid K).
* Brita filtered tap-water, filled to just below the raised letters.
* 1Kg BeeMaid pasteurized honey, unmeasured - trusted bottle.
* Air-lock filled with sanitizer

* Starting @ 23.1C

## Day 2 - 2023-11-24
* Fermentation has started, bubbles observed in the morning, slower than last batch though.  Maybe not enough oxygen?
* Fed yeast nutrient

* Mixed with infected maple sryup while back-sweetening, drank within 2 days because I was no longer comfortable letting it age.
